〔Gosht Karahi鑊仔牛肉〕
Karahi 是一種南亞地區常用的鑊,有很多南亞菜式都會使用Karahi來烹煮,然後直接連鑊上菜,保留材料在熱鑊被微微炒焦的香氣。這次巴基斯坦太太Sultana Ji分享的Gosht Karahi 煮法跟之前介紹的肉類菜式類似:
先在鑊中下油爆香薑、蒜和洋葱,加入牛肉炒至半熟,再加入番茄煮淋。當所有材料融和後,就加入用來煮牛肉的garam masala 綜合香料來調味,再加適量的水份讓材料煮滾。關火前再加上新鮮青椒和莞茜添加香氣和顏色。 大家有機會都可以黎屏麗徑既南亞餐廳試下佢地既招牌鑊仔菜式架 :) 〔隔離飯香:南亞住家菜式分享〕菜式會持續更新,敬請期待! << Gosht Masala 馬沙拉羊肉>>

〔Gosht Karahi鑊仔牛肉〕
Karahi is a round wok commonly used in South Asian area. Many South Asian dishes are cooked and served in karahi in order to keep the wonderful smell in the slightly burnt ingredients. Many thanks to Pakistani lady Sultana Ji for sharing with us her way to cook Gosht Karahi, which is similar to the meat dishes we introduced before:
First, put ginger, garlic and onion into the hot oil in a wok, then fry them with beef. When the beef is medium cooked, put in the tomato and cook until it is softened and mixed with other ingredients. Add the beef garam masala to raise the flavor and add water and let it cook for a more while. Before turning off the heat, put some fresh sweet pepper and coriander on top to add smell and color to the dish.
